Wilfrid CHAPLAIN
Chef : 1 restaurantWilfrid Chaplain caught the cooking bug as soon as he began his CAP (vocational training certificate) in 1986. The native of Normandy completed an apprenticeship at the hostellerie Le Moulin Fouret, in Bernay (Eure), where he landed a position as commis.
In 1997, ten years after his arrival, he gave up his position as second in command for a chef's post at Domaine de Chicamour, in the Loiret region. " I told myself that just because I hadn't worked in any of the big houses didn't mean I couldn't aim for great cuisine. "He went on to become chef at the restaurant of the Blanche de Castille hotel, in Dourdan (Essonne), then at the Château de Castel Novel, in Varetz (Corrèze), " fine establishments that gave me carte blanche ", he recalls.
Then, in 2003, Wilfrid Chaplain joined Domaine Saint Clair Le Donjon, in Étretat (Seine-Maritime). Six years later, Caroline Mioche invited him to take charge of the kitchens at the hotel-restaurant Le Radio, in Chamalières (Puy-de-Dôme), an offer he readily accepted. His mantra: " Try to be better than today. "Gault&Millau rewarded him with 2 toques in his first season and the Trophée Jeune Talent Auvergne 2013. The 3rd toque was awarded in 2023.
