The sumptuous setting of Le Meurice lends itself to Ducassian grandiloquence, and justifies the overwhelming international response to the global renown of the master and his pastry chef Cédric Grolet. Of course, this triumph is due in no small part to the precise and appropriate work of Amaury Bouhours, who steers a select brigade with firmness and knowledge, leaving nothing to chance. The dishes arrive with precision, meticulous presentation and ideal temperature: petit pâté chaud de pintade et foie gras, bar de la Côte d'Opale blette raisin noix aneth, veau celtuce olive cassée menthe, for a sequence that perfectly represents, as is its role, great updated French cuisine. Desserts are in the same vein, with a rum baba "of your choice", service is well paced, and the cellar is considerable, with impressive verticals of great châteaux.
