Gault&Millau Academy's member In a mythical, historic setting, Alain Ducasse, his teams and his chef Amaury Bouhours present a highly eloquent panorama of French fine dining. In this respect, and judging by the high number of foreign, mainly Asian, customers (the same ones who wait on the sidewalk outside the boutique of Cédric Grolet, the company's star pastry chef, all day long), the success is obvious. Grand protocol, grand service train, perfect coordination - there's never a dull moment in the room, with its gilding, chandeliers and show. On the plate, the execution lives up to its promise, in measured portions: when the starter arrives, some people think it's the fourth course of amuse-bouche. The spider pea rhubarb makes for a fresh and ultimately very vegetal starter, while the turbot, also perfectly cooked, tends to take a back seat to the sauce, capers and criste-marine in this millimetric, piloted and even remote-controlled cuisine, which of course requires silverware and 9-47. And of course, when the master pastry chef's creations appear, all you can do is bow down: this strawberry tart is both a work of art and a delight. A good, not enormous, palace cellar that doesn't bother with small regions, and not so extravagant in its prices. Small selection by the glass, from €30 (sancerre, menetou...).
