Prestige Restaurant Stéphane Buron thinks, lives, breathes and speaks Chabichou. With respect, humility and memory, he continues to drive this major house forward. His talent, his precision, his qualities are now those of a 100% Chabichou chef. Of course, the MOF from Limoges, who loves Brittany as much as the Mediterranean, could adapt to other climes. But Chabichou needs him too much. So much so that the successive dishes on this magnificent, opulent menu are immediately felt more for the house than for their intrinsic value. Granny Odette's artichoke, for example, is immediately classified as "good for service": we dive right into the product, with this royal under a truffled emulsion and a vinaigrette so addictive of childhood memories. Like the langoustine, so emblematic of this work that's always clever, not show off for two rubles, but knows how to magnify the luxury product. The langoustine is marinated in fermented rice, cut into logs, flanked by a clementine-urchin condiment on a stracciatella tartlet and a langoustine aspic topped with Kristal caviar. Of course, in a 5-, 7- or 9-course menu, the highlights are striking, but everything has a meaning, in the scenography (beautiful end to the table-cooked Arctic char with celtuce and nasturtium sauce), the journey (the kale shrimp sauté and grilled oyster and foie gras bok choy drizzled with dried shrimp extraction), the declension pushed to its limits (the onion on the beautiful turbot seared in buckwheat butter) or the culture (the albufera with the superb Bresse poultry with parsnips and white truffles). The Chabichou magic does the rest, and the service has been renewed and rejuvenated, in a rather "grande école" style. The new young sommelier is enthusiastic about this very powerful palace cellar, which nonetheless offers regional pleasure at a lower cost.
