Prestige Restaurant Jean-Luc Brendel's restaurant is a unique world, somewhere between Alsace and David Lynch films, with its breathtaking decor of red walls and black beams, both impressive and dreamlike. The decor of this 1539 house alone embodies the uniqueness of the restaurant, which has been swimming in open waters since 1982. The chef is no less close to his roots, which he asserts at every moment of his cooking, from the gardens of the Kobelsberg to the plate. Jean-Luc Brendel is first and foremost a lover of his land, 7500m2 of which he cultivates on the outskirts of the city, where no fewer than 350 species grow, some of them rare, reflecting both his passion and his quest for excellence. The taste for beauty and goodness are intimately linked in this aesthetically pleasing place, and are reflected in the structure of the plates, artistic references and a real sense of mise en scène, such as beet and horseradish ice cream, plankton and pike egg, burgundy red on blue porcelain, crunchy against melting, spicy against salty and acidic; then the Hockney-like kohlrabi, with saffron, smoked trout, basil, peas and rhubarb, the work of a gardener in love; then the Arctic char, the pinnacle of the menu, cooked to absolute perfection, a pinnacle of simplicity and excellence, served with a parsley purée and a light sauce, like a definitive trinity. Don't miss the matured beef and the famous Mexican tarragon choron sauce, the astonishing work on the gherkin; and finally the rhubarb and wild strawberry dessert, dense, long on the palate, fresh and balanced. In the cellar, we find the expertise and good advice of Anne Humbrecht, erudite guardian of a very high-level selection, intelligently divided according to the geological nature of the terroirs: sandstone, schist, granite, volcanic, limestone, clay... If Alsace is the first region represented, the other vineyards of France are also very well defended.
