Exceptional Restaurant Why is the Assiette Champenoise the most beautiful house in France? Because it has everything the word "maison" has come to mean in the national imagination: a close-knit family, a loyal team, ongoing improvements (an entire floor of rooms and suites was renovated this year), excellent food, and a palatial service in a family-run pavilion. If we go into detail, what Arnaud Lallement has built up with his wife Magali, but also his sister Mélanie, his mother Colette, and today his son Brice, who assists him in the kitchen, is a place of extreme prestige while retaining a human dimension, something that, despite all their resources, the major groups in their gilded palaces cannot offer. And then there's Arnaud's cuisine, so brilliant and so close, so generous, so frank and so precious all at once. The crunchy green bean, modest yet a star, the crab reinvented under its shiso leaf, on a vegetable broth reduced with butter, evokes both the Breton ocean and the softness of the prairies, the enormous langoustine with emulsified head juice or the osciètre caviar with citrus vinaigrette and shellfish oil illustrate this ease in all facets of French cuisine, the rich and the poor, the vegetable and the seafood, always with the right taste, gourmet seasoning and dazzling execution. The dishes of a man who has adopted the mantra of "knowing where you come from, where you are and where you're going" are as humble as they are confident. Here, it's Champagne, the bubbles have to flow, the dishes have to be as sparkling as the great vintages amassed in a cellar overflowing with riches, but above all paying homage to all those winemakers, friends and strangers alike, who pursue the same goal as the chef himself, to do the best and even the best while remaining honest and proud. There are few cousins to be found with this unique house and chef, but one can find, in spirit, a touch of Michel Guérard in this way of offering extreme nobility to a simply dressed product, the lobster jus with tail caper sauce and caper flowers, the sole and its blue shrimp marinière, and again this prodigious vol-au-vent without pastry, sweetbreads gambero poularde and a kind of chicken sauce to lick the plate. We remain levitated until we reach the desserts by Grégory Masse, who transfigures strawberry, raspberry and chocolate in total harmony with what precedes... Florent, now the chef's brother-in-law, enlivens the dining room with brio, and the sommelier team does a fantastic job of matching, advising and adapting to each table.
