Thanks to multi award-winning chef Arnaud Lallement, Grand de Demain and then Cuisinier de l'Année in the Guide France 2014. But not only that. Because L'Assiette Champenoise is above all a family adventure, Arnaud Lallement has been able, after his father, to realize all his dreams thanks to the support of the clan - his mom, his sister, Magali, his wife, and soon perhaps his children. It's the kind of bond that's essential to this highly gifted chef, who can only function when his relationships with his team - both in the kitchen and in the dining room - are as close-knit as anywhere else.
Arnaud Lallement was born in 1974, in Reims, and has always been immersed in the restaurant business, first with his parents in Châlons-sur-Vesle, then in Tinqueux from 1986, in the beautiful bourgeois house they transformed into a hotel-restaurant. Before taking over from his father, who passed away too soon, in 2002, our future Chef of the Year trained with the greats, Roger Vergé, Michel Guérard and Alain Chapel. With them, he came into contact with excellence, a taste for effort, and a sense of the product that would shape the chef he is today.
L'Assiette Champenoise, thanks to Arnaud Lallement, has become the very symbol of a Champagne region that radiates around the world, of the luxurious yet never guilty pleasure of beautiful, abundant and joyful cuisine. Nowhere else in France can we celebrate the arts of the table, exception and excellence in such a way.
