Remarkable Restaurant An authentic, committed Basque restaurant with a strong sense of identity, in the most charming of settings, the port of Ciboure. Guillaume Roget masters his subject, crafting seasonal menus that are both deeply rooted in regional tradition and highly personalized: pan-fried hake kokotxas, grilled pig's trotters with cardamom sauce, steamed sole from a small boat, chipirons in tagliatelle, smoked potato and liquorice-infused matelote, a delightful dessert of chocolate and Tahitian vanilla, pecan nuts and orange blossom. The precise, cheerful service helps to create a warm, gourmet atmosphere, and the cellar offers a wide selection of wines from all over the South-West.
