Guillaume ROGET
Chef : 3 restaurants Manager : 2 restaurantsNow head chef of his own establishment, Guillaume Roget initially wanted to open a bar. In 2001, during an internship with the Frères Ibarboure, he discovered his passion:"I went out thinking: 'I'm going to become a sommelier'", he recalls. That's how he got his start at Château de Brindos, where he became head sommelier after just six months.
In 2005, he moved to Jurançon, to the Chez Ruffet restaurant, led by Stéphane Carrade, and took a keen interest in food and wine pairing. "It was a determining factor in my career as a chef."A year later, he joined the Campanella brothers' Château de Candie in Savoie.
At the age of 23, Guillaume Roget opened his first restaurant, La Cabane du Pêcheur, on the port of Hendaye, where he worked as a sommelier. Seven years later, he missed the world of gastronomy. Just in time, Le Brouillarta in Saint-Jean-de-Luz was looking for a sous-chef."They were in a mess in the kitchen, and I just had to do the summer to help out," he recalls. A year later, in 2015, he became manager of the establishment and took over the kitchen reins.
The adventure lasts until 2020. Although the consequences of the health crisis had a chilling effect, in 2021 the chef opened Ekaitza, in Ciboure (Pyrénées-Atlantiques). His success was rewarded a year later with the Cuisine de la Mer, des Lacs et des Rivières trophy at the Gault&Millau Tour Nouvelle-Aquitaine.
