Chef : 1 restaurant" I always wanted to be an entrepreneur and head of a catering company," recalls Rébecca Beaufour. So, after studying business and completing her first internship at L'Arpège with Alain Passard, the young woman went on to train at the Ferrandi school in Paris.
Her first outstanding experience? An internship with Julien Duboué at A Noste. " I said to myself that I wanted to be like him in my relationship with work, teams and family. It was the model of restaurant and balance that I wanted to reproduce in my establishment. "In her second year, she became a clerk in the Senate after a young cook turned down the job. " It's the best school I've ever been to," she asserts. Last but not least, she gained palace experience at La Table de l'Espadon at the Ritz.
After completing her studies, Rébecca Beaufour worked for a few months at Matignon, before landing a position as head of entremets at Le Grand Véfour in Paris. But then 2020 arrived, with its confinements. The chef then launched her own home delivery service, Becca Chez Vous. " It was a first business experience before opening my own restaurant, " she says, and in June 2022, Dante opened in the 10th arrondissement of Paris. Impressed, Gault&Millau awarded her a 12/20 rating and selected her for the 2023 edition of its book 109 - Le Sang neuf de la gastronomie française.
