Paul AMBOMBI
Chef : 1 restaurant Chef Paul Ambombi is at the helm of Ma Biche sur le Toit, the festive rooftop created by Michel Sarran and offering an incomparable view of the city of Toulouse."As a child, I loved watching "Bon appétit bien sûr", the cult TV show presented by Joël Robuchon. He would invite famous chefs. I'd try to reproduce the recipes at home..." says Paul Ambombi. At the age of 14, he completed his first internship at Le Bibent brasserie, followed by a second at La Villa Tropézienne, both in Toulouse. Confirmed in his choice, the apprentice trained there during his years at the CFA in Blagnac. "At the end of my studies, I wanted to see what was going on in the kitchens of multi-cuisine restaurants, so I went to take a look in Michel Bras'. "
Motivated to work in haute gastronomy, the young apprentice then set off to meet Michel Sarran, "first of allto do a one-week internship". Satisfied, the 4-toque chef took him under his wing. "I joined his brigade as a commis and became second chef seven years later! With passion and motivation, I climbed the ladder. "
In 2015, Paul Ambombi continued his ascent by taking the helm at Les Sales Gosses. After two years of working himself to exhaustion, the chef decided to take a break, teaching cooking classes in Toulouse. But he soon realized that he missed the kitchen. In 2017, he headed up those of the short-lived restaurant L'Envol, in Balma (Haute-Garonne), for two seasons, before flying to Ma Biche sur le Toit, perched on the sixth floor of Galeries Lafayette, a rooftop created by Michel Sarran. "When I arrived in 2018, I collaborated as chef with Baobab Audouard, also close to Michel Sarran and originally from Singapore. I offered classic French cuisine, and he came to break the codes by adding Asian touches." With Baobab Audouard off to other adventures in 2022, Paul Ambombi continues in this vein and maintains the 2 toques.
