Noa GUINDEUIL
Chef : 1 restaurant Noa Guindeuil's warm welcome is a delight for customers at Le Caneton, the chic Rennes bistro where the young woman has recently opened her doors.While still in high school, Noa Guindeuil did odd jobs in restaurants in Rennes. She never expected to make a career of it. "I liked the environment, the contact with people, the dining room... so I stayed!" she confides. In 2016, she landed a position at L'Ambassade restaurant in Rennes. "That's where I met Pierre Clolus, with whom I still work."
Joining at 19, Noa Guindeuil stayed with the establishment for seven years, progressing from waitress to front-of-house manager. "It's allgone by so quickly, we've had a lot of work done, the restaurant has grown and the team has doubled. I like looking after the bar side and the restaurant side, and the place has become familiar to me."
In 2023, the young woman has the opportunity to open Le Caneton, Pierre Clolus' second restaurant in Rennes. In this bistro, the co-manager welcomes customers in a friendly, invigorating atmosphere. A friendly welcome that Gault&Millau wanted to highlight in the 2024 edition of its 109 - Le Sang neuf de la gastronomie française.
