Prestige Restaurant Mauro Colagreco is not only a great chef and a visionary of his time, he's also a warm-hearted clever guy who knows how to draw you into his world of fruit, flowers, plants and little birds. Literally and figuratively, he takes you on a tour of his garden, taking you by the hand from one end of the meal to the other. It's hard to resist this well-constructed farandole, a narrative so playful it can only bring a smile. These flowery, fragrant plates are followed by a series of themed dishes. Fruit, for example, with the gambero rosso peach and shiso, a lovely fresh combination, hazelnut and almond, the two stars of the show, underlined by the crème aux couteaux, the pretty braid of zucchini and its anchovy-lemon oil, the clever zucchini trompette pesto and mascarpone shellfish and herbs. The location, on the Franco-Italian border, evokes the mix of an Italian-French-Argentinian chef who succeeds just as well, giving the gourmandise of a porcini mushroom parmesan tartlet, of red mullet scorpion fish with its powerful rocky juice of chickpeas and peas, as of pigeon perfectly stewed in a large citron. Just like at the Assemblée Nationale, Mauro asks for a vote of confidence from his guests, taking them on a well-marked course entirely chosen by him, right through to the deft, fresh desserts by Marius Dufay (but why three iced desserts in a row?), once again playing with the pick of the moment (a fine success with the taggiasche olive). A large cellar book offering multiple directions, allowing you to indulge yourself without having to worry about pairings, since the mystery is complete when it comes to the proposed sequence, and excellent service from a team committed to the success of the project.
