Matthieu Dupuis Baumal was predestined to be a professional rugby player. A member of Biarritz Olympique, where he trained intensively, he was nevertheless forced to stop his career after a number of injuries. With a CAP from the Nantes hotel school in his pocket, he decided to devote himself fully to the restaurant business. "As a rugby player, I was already working at the Hôtel du Palais in Biarritz, alongside Jean-Marie Gautier, but with specially adapted hours."

At the age of 21, Matthieu Dupuis Baumal ventured to Japan and fell in love with the country's gastronomy. "I did a number of internships there, notably with Eiichi Edakuni. It was an electroshock, a revelation. I realized that cooking, with its travels and team spirit, was for me. Since then, I've been going back every year."

Back in France, the young chef rubbed shoulders with the greatest names in French gastronomy: Bernard Bach at Le Puits Saint Jacques in Pujaudran (Gers), then Éric Briffard at the Four Seasons Hotel George V in Paris, and Michel Troisgros in Roanne. " After four years of loyal service, he handed over the reins to Michel's son César, who set off to discover South America. "I've always had a strong taste for travel, and I even created an association to organize it with my teams, on the theme of gastronomy. So, we went to Japan in 2018 and three weeks in Brazil in 2020, discovering local chefs."

In 2015, Matthieu Dupuis Baumal became executive chef at Domaine de Manville, in Les Baux-de-Provence, before taking over, in 2019, management of the four restaurants at Château de la Gaude, in Aix-en-Provence - the former setting for Yves Robert's film Le Château de ma mè;re. "I also owe this rating to the team spirit that comes from rugby and which has never let me down. In our field, management seems to me to be essential." At the gastronomic restaurant Le Art, Matthieu Dupuis Baumal defends a Provençal cuisine resolutely focused on local produce, in particular Mediterranean fish, with a hint of travel and modernity. He was immediately awarded 3 toques, followed by a fourth in 2023.
