Chef : 3 restaurants"Lookingback, I realize that I did spend quite a lot of time in the kitchen," Franck Baranger admits. When he saw a friend start an apprenticeship after secondary school, something inside him became clear. He spoke to his mother, who had spent her entire career in the culinary arts, and within a week, without his knowledge, he found himself with a school and an apprentice master.
In 1996, Franck Baranger began his training at L'École de Paris des métiers de la table. Until 1998, his apprentice master was Jacques Sénéchal, succeeded by Christian Constant (at Violon d'Ingres). In 2000, the young man left for the Bristol. He was an apprentice there until 2002, but didn't leave until 2005, after having worked his way up from commis to chef de partie tournant. He then did a stint at the Plaza Athénée: "I wanted to go back to smaller structures," he says, and went on to work at L'Instant Gourmand, a restaurant opened by Jérôme Douillet in Levallois-Perret. In 2007, he worked as a chef for an American ambassador to UNESCO. The following year, he returned to work with Christian Constant at Les Cocottes, before working for another ambassador to Unesco.
In December 2010, Franck Baranger joined forces with Édouard Bobin and Nicolas Chatelain, two former hotel school friends, to create his first bistro, Le Pantruche, which reinvented the genre. Then, in October 2013, Caillebotte was born. As both openings took place on a Thursday, this day of the week became symbolic, and it was naturally on a Thursday in September 2016 that Belle Maison opened its doors, named after a beach on Yeu Island. These three addresses are crowned with 2 toques and meet with great success. In June 2019, the team joins forces with Pauline Labrousse to launch Coucou Café. And in June 2021, the quartet will inaugurate Café Mirette, housed within the walls of the Pernod Ricard Foundation, which, by some misunderstanding, may also have opened on a Thursday!
