Presentation

A native of Arras, Florentin Vasseur obtained a BTS in hotel and restaurant management at La Roche-sur-Yon, before joining Jacques Chibois' restaurant La Bastide Saint-Antoine as a commis. "It was a beautiful restaurant where I learned a lot, especially about working with fish.

On the strength of this first experience, he returned to the Vendée and worked at Le Cayola. "A gastronomic, avant-garde restaurant, where I learned to master cooking techniques, and worked a lot with meats." He stayed there for eight years, rising from commis to second chef. It was there that he met his future partner, Alexia Chaumont. The two decided to open their own establishment. They bought a restaurant, renovated it and inaugurated Accalmie in April 2023.

Their stated aim: to surprise customers, "dare to make daring combinations, and cook with local, seasonal produce as much as possible". Particular care is taken in choosing suppliers, most of whom are located within a 30 km radius. The fish comes from the Sables-d'Olonne fish auction, and the fruit, vegetables and eggs are organic.

At lunch, the young couple offer a "market menu" and a more gourmet offering at dinner. "I mix my ideas with those of my partner, we try to work with accessible products, not necessarily very luxurious, and to offer them in different forms and textures. " The desserts, too, must be a surprise, as in this astonishing combination of apple and wakame, or the "chocolate, pumpkin, tarragon" variation.

Dishes evolve every 4 to 6 weeks, without the menu changing completely. "We adapt to suppliers and producers. When they run out of certain products, we work on something else." After a promising start, the couple have given themselves five years to progress, make a name for themselves with suppliers and customers, and why not expand. Gault&Millau immediately awarded them a 12/20 rating.
