Alexia CHAUMONT
Chef : 1 restaurant Young Alexia Chaumont now runs the Accalmie restaurant in La Tranche-sur-Mer, alongside her partner Florentin Vasseur.It was during a European tour that Alexia Chaumont decided to change her life. "I didn't feel very fulfilled after my BTS in communications. And as I'd always been attracted to cooking, I decided to retrain," she explains. After obtaining her CAP (vocational training certificate), she went on to take a vocational diploma and served a two-year apprenticeship at the Atlantic Hôtel in Les Sables-d'Olonne. She then worked at the Cayola, where she met her future husband, Florentin Vasseur, with whom she decided to open a restaurant. The two of them bought a business, renovated and embellished it. "We wanted a clean decor and a cosy atmosphere, so that people would feel comfortable here, hence the name Accalmie."
What drives Alexia? Creativity! "In general, I start with the dressing, then imagine the taste, the flavors to combine, and add the different ingredients. "And if, at first, she was more concerned with meats, today the roles have reversed a little and she works more with fish. The two chefs pool their ideas, discuss them and complement each other. Each expresses his personality, creates a recipe, and the other respects it, adding his personal touches and favoring local products as much as possible.
"In creating our recipes, we also draw a lot of inspiration from nature and the environment. "For example, the "Chocolate-Potimarron-Estragon" dessert evokes a walk in the forest, while the "Apple-Wakame" is reminiscent of the seaside, with a foam of wakame seaweed and a crumble featuring sand. The young couple's credo is to create a surprise. "That's why we don't reveal the details of the dish on the menu. We just list the main ingredients. We love talking to our customers in the dining room, telling them about the cooking and the textures we wanted to bring to the table." For the time being, the young couple limit themselves to 12 covers, to facilitate service and exchange. Alexia Chaumont's ambition is to move forward together and strive to do better. Gault&Millau immediately awarded her a 12/20 rating.
