At the end of 2025, Institut Lyfe and Yannick Alléno will open Pavyllon, a new restaurant-school on Place Bellecour in Lyon. This project combines gastronomic excellence and the transmission of know-how for the benefit of future generations.

Institut Lyfe, an international benchmark in training for the gastronomy, patisserie and hotel trades, has teamed up with chef Yannick Alléno to inaugurate Pavyllon, an innovative restaurant-school due to open in late 2025 on Lyon's Place Bellecour. This project, the fruit of a long-standing collaboration, aims to combine culinary innovation, French excellence and the transmission of know-how.

A long-term partnership

This new chapter consolidates an already fruitful partnership between Yannick Alléno and the Institut Lyfe, marked in particular by the creaation in 2021 of the École de la Sauce, dedicated to research and teaching on the fundamentals of French cuisine. With Pavyllon, this alliance takes on a new dimension: the former L'Institut restaurant will become a living showcase for culinary modernity and learning by doing.

Designed as a forum for exchanges between professionals and students, the restaurant-school is part of a wider reflection on the future of the catering professions. It anticipates the sector's new challenges: sustainability, technical innovation, and adaptation to the expectations of a clientele in search of meaning and emotion.

Yannick Alléno, chef mentor and purveyor of knowledge

at the helm of the Pavillon Ledoyen (5 toques) in Paris, Yannick Alléno is pursuing his mission of transmission. "Embracing evolution and integrating new practices is, for me, at the heart of training young talent. With the Institut Lyfe, we are building a framework where innovation and transmission coexist in the service of tomorrow's gastronomy", declares the chef.

His approach, based on the mastery of modern sauces, extractions, fermentations and sugar-free cooking, will be at the heart of the experience offered at Pavyllon Lyon.

Immersive learning for excellence

With over 30 years of expertise behind it, Institut Lyfe has confirmed its position as a leader in hotel and restaurant training. Already renowned for its immersive approach, its teaching methods are supported by a unique ecosystem: a 5-star hotel(Le Royal - MGallery), a gastronomic application restaurant(Saisons), and now Pavyllon Lyon, which joins the circle of Pavyllon establishments already set up in Paris, Monaco and London.

Each year, over 300 students from all over the world will develop their skills in cooking, pastry-making, service and management. This restaurant-school will offer a privileged testing ground for the most innovative techniques, as close as possible to the profession's standards of excellence.
