The Institut Lyfe (formerly Bocuse) continues to offer these high-level meals, orchestrated by a highly-trained brigade. Set in a historic residence, the Château du Parc du Vivier, chef Florian Pansin's meals are in keeping with tradition and the expected standards: langoustine from Brittany with "rousse" vinaigrette, sole from a small boat with Grignan truffles, saddle of lamb with buckwheat, blackcurrant and tarragon chocolate... The €115 menu makes a fine introduction.
