In Argelliers, a family home honoured by Gault&Millau

Jérôme Aurelle, head of theAuberge de Saugras (2 toques) in Argelliers, was honored on Monday April 13, 2026, at the Domaine de la Trinité in Mauguio, during the Gault&Millau Tour Occitanie-Andorre 2026. The award, presented by Smartbox's Chloé Bouquin, recognizes chefs who bring traditional cuisine up to date with the times.

A career faithful to his roots

Born in Millau in 1967, Jérôme Aurelle was destined from an early age to take over the family farm inn. Trained at the Lycée Hôtelier in Saint-Chély-d'Apcher, he then honed his culinary skills, notably during his military service, before joining the Midi Papillon restaurant in Saint-Jean-du-Bruel.

In 1990, he took the next step by taking over the family business in Argelliers with his brother. It was a founding adventure, marked shortly afterwards by a decisive meeting: that of Aurore, his future wife, who came for a season to work in the dining room, and who would never leave the house again.

A house of family and terroir

Housed in a former XIIᵉ century wine farmhouse, the Auberge de Saugras is now both restaurant and guesthouse. This place steeped in history, nestled in the heart of the countryside, is a family affair: alongside his wife Aurore and their son Guilhem, trained as a sommelier, the chef perpetuates a certain idea of dining, sincere and without artifice.

at the Auberge de Saugras, the cuisine remains true to its fundamentals. Foie gras, daube de sanglier (wild boar stew) and ris de veau (sweetbreads) bear witness to a deep attachment to traditional recipes, executed with precision and consistency.

With this Tradition d'Aujourd'hui trophy, Gault&Millau is shining the spotlight on a chef who, far removed from fleeting trends, has for over thirty years defended a style of cooking that is rooted in the land and looks to the future.
