Gault&Millau's review2026
A charming building, lost in the middle of the Hérault garrigue, offering ultra-gourmet traditional cuisine, perfectly mastered: welcome to the Auberge de Saugras, where chef Jerôme Aurelle and his wife Aurore know how to entertain! Fresh, local produce is used to prepare, among other dishes, foie gras mi-cuit, pan-fried foie gras (or both, for the hungriest), gambas flambées, daube de sanglier (wild boar stew) or tripoux, not forgetting the warm apple flaky pie... A well-stocked wine cellar, especially regional.
