Tom Meyer will design the menu for the future restaurant at the Madame Rêve hotel
The Madame Rêve Hotel, located in Paris’s 1st arrondissement, has entrusted Chef Tom Meyer with creating the menu for its new restaurant, which is scheduled to open in early September 2026.
The Parisian culinary scene is set to welcome a new restaurant led by one of the most acclaimed chefs of his generation.The Madame Rêve hotel has announced the arrival of Tom Meyer to create the menu for its future restaurant, expected to open in the fall of 2026. The chef will serve as a consulting chef to Benjamin Six, the hotel’s executive chef, to define the culinary identity of this new restaurant, which will round out the dining offerings at the hotel on Rue du Louvre.
A Return to Paris for Tom Meyer
This collaboration also marks Tom Meyer’s return to Paris’s 1st arrondissement, a neighborhood that holds a special place in his professional career. It was in this part of the capital that he established his culinary identity by opening his restaurant Granite in 2021, quickly establishing himself as one of the most promising talents on the French gastronomic scene.
For this new project, the chef of La Chèvre d’Or (4 toques) in Èze intends to develop a contemporary French cuisine true to his vision: distinct flavors, precise seasoning, and a creative approach without ostentation. This concept is designed to align with the spirit of Madame Rêve, which aims to strengthen its roots in French gastronomy while preserving the diversity of influences already present in its other dining venues. The future restaurant will be located in the spaces currently occupied by Le Kitchen. Renovation work will be carried out throughout August to transform the space and mark this new chapter for the Parisian establishment.
For Laurent Taïeb, founder of Madame Rêve, this opening is part of a commitment to continually evolve the experience offered to guests. “Since its opening, Madame Rêve has been a place in constant evolution. For this fifth year, together with our Executive Chef Benjamin Six, we wanted to enrich the dining experience with contemporary French cuisine, further expanding and reinforcing the offerings of our restaurants.” ” He also explains the choice of Tom Meyer to lead this evolution: “ Naturally, we thought of [him] to create this new menu. His modern cuisine and his roots in the 1st arrondissement resonate with the experience we want to offer our guests.”
With this new restaurant, set to open in early September 2026, Madame Rêve continues to expand its culinary offerings and aims to further solidify its position among the capital’s top culinary destinations.
