For the second time, the Ruinart champagne house is setting the table at Cheval Blanc Paris. From October 15 to 25, Chef Arnaud Donckele will create a new menu paired with the house’s champagnes.
The Champagne house Ruinart is setting up shop at Cheval Blanc Paris for its second edition, October 15–25. On the agenda: masterclasses and gastronomic experiences designed to pair with Ruinart’s unique cuvées. In the kitchen is Arnaud Donckele, chef of the Cheval Blanc Paris and Cheval Blanc St-Tropez restaurants. He’s taking on the challenge once again and has created an all-new menu.
“From Vineyard to Table”
This edition celebrates the Champagne terroir. Conceived as an immersive experience “from vineyard to table,” it pays homage to Chardonnay. This iconic Ruinart grape variety comes to life on the plate through an exclusive menu created for the occasion.
For a few days, several pop-up events centered around Ruinart cuvées will be offered to the public by reservation: two lunches and six gourmet dinners, presented in seven courses by the chef and his team. Seven Ruinart cuvées will accompany the meal. “The Ruinart vineyard is a profound source of inspiration from which I draw, thanks to the expression of Chardonnay and its vitality— that aromatic freshness that allows me to create a menu where the precision of flavors and the finesse of textures complement each other, resulting in a clear harmony between the dishes and the champagnes, ” said Arnaud Donckele.

Masterclass: Chardonnay and Vintages in the Glass
“Signature Chardonnay” masterclasses will offer a three-part exploration of Chardonnay’s expression through three cuvées: Ruinart Blanc de Blancs, a reflection of the Ruinart style; Ruinart Blanc Singulier Édition 20, the result of the winemaking team’s expertise; and Dom Ruinart Blanc de Blancs 2013, a vintage aged under cork. “Cave des Millésimes” masterclasses will follow the same format, but this time exploring a selection of vintages. Three chef’s bites, crafted to pair perfectly with the champagnes, will accompany the House’s cuvées for each experience.
