Named Young Talent of the Year in 2024, Quentin Durand shines this year by winning the Cuisine de la Mer, des Lacs et des Rivières Trophy at the Gault&Millau Tour Bretagne 2026, held this Monday 1ᵉʳ June at Domaine du Liziec.
On Monday June1, 2026, in the prestigious setting of the Domaine du Liziec, Breton chef Quentin Durand was awarded the Trophée Cuisine de la Mer, des Lacs et des Rivières by the yellow guide.
From the kitchens of the greats to his homeland
The chef from Pont-l'Abbé in Brittany sharpened his knives as he criss-crossed France. He started out at Le Nouveau Monde in Saint-Malo, with Stéphane Haissant, then perfected his skills with Patrick Jeffroy in Carantec, Nicolas Salé at Le K2 in Courchevel, and Casadelmare in Corsica, even quickly moving on to work with Anne-Sophie Pic. A stint at La Bastide de Gordes, under the signature of Pierre Gagnaire, led to his first chef position at Pan deï Palais in Saint-Tropez.
Finally, it was in 2023 that his native land called him back. He opened Maison Vermer, formerly Coude à Coude, in Saint-Malo, with his wife Sophie. The response was overwhelming: in just six months, the chef's table was awarded two toques.
Nominated, awarded, the climb continues
Today, the double-toque chef receives the Trophée Cuisine de la Mer, des Lacs et des Rivières, awarded by Jean-Christophe Moll of Kaviari. The award recognizes Quentin Durand's light, inspired cuisine, supported by a short menu that evolves with the seasons. With an easy, mastered technique, the chef has never ceased to make the most of products, particularly seafood, paying homage to his native land. This trophy crowns his technique and his work with products from the sea, lakes and rivers.
