Philip Chronopoulos takes the helm at Le Taillevent
The Franco-Greek chef will succeed Giuliano Sperandio at the helm of the legendary Parisian restaurant from September. A strategic appointment for this institution of French gastronomy, which intends to continue its pursuit of excellence.
Le Taillevent (3 toques) is opening a new chapter in its history. Just days after the announcement of Giuliano Sperandio’s departure, the Parisian institution has officially named his successor: Philip Chronopoulos. From early September 2026, the Franco-Greek chef will take the reins of this great house on rue Lamennais, with a mission of the highest order: to leave his mark on one of the most iconic addresses in French gastronomy while continuing the momentum built in recent years.
Who is Philip Chronopoulos?
Known for his work at the Palais Royal Restaurant, Philip Chronopoulos has established himself over the years as one of the most promising talents of his generation. Born in Athens and trained alongside major figures in French cuisine, notably Alain Passard at L’Arpège and Joël Robuchon at L’Atelier Étoile, he has built a career in which technical rigour is combined with contemporary sensibility. Alongside his work at the Palais Royal, he also served as executive chef of the Evok group, overseeing several establishments in France and Italy. Since the closure of the Palais Royal Restaurant, replaced by Maison Ruggieri, the chef had kept a low profile. His arrival at Le Taillevent thus marks his return to the helm of a great Parisian restaurant and his first major project since that transition.
He succeeds Giuliano Sperandio, whose tenure profoundly shaped the house. In just a few years, the Italian chef managed to breathe new life into Le Taillevent, modernising its approach while respecting the DNA of this institution founded in 1946. He announced his departure in June, heading towards a new project in South America.
For Philip Chronopoulos, the challenge now is to continue this momentum while asserting his own vision. True to the great French gastronomic tradition, he is expected to continue in the spirit of Le Taillevent’s history, where the sense of product, the precision of craft and the excellence of service remain the foundations of the experience.
