Romain Meder, chef at Domaine de Primard in Guainville, shares his tips for buying bread, vegetables and cider. Take notes!

Since 2022, Romain Meder has been based at the Domaine de Primard, the former home of Catherine Deneuve. It's here, in the heart of 40 hectares of nature, between gardens and rose gardens, that the chef creates a gastronomic cuisine centered on plants at the Les Chemins restaurant, as well as a more accessible offering at Octave. To offer his customers the very best, Romain Meder sources his produce mainly from local producers who are committed to working the land and raising livestock with respect. Today, the chef reveals the names of some of his suppliers, as well as those of artisans based elsewhere in France, whose work he admires. Here are Romain Meder's favorites.

Cider from La Ferme des Noés, Saint-Aubin-sur-Gaillon

La Ferme des Noés produces a number of products based around fattened duck, including rillettes, foie gras and confits. But Romain Meder is particularly interested in their cider apple products. "I order a lot of rosé ciders from them! They also make apple juice, cider brandy and Norman aperitifs", explains the chef, who adds that the farm has its own store on site.

Meat from Boucherie Arnaud Begeot, Échenoz-la-Méline

Arnaud Begeot is a friend of Romain Meder, whom the chef highly recommends. "He's a butcher and pork butcher, and he does his job very well. He attaches great importance to the selection of his animals, and has won several competitions, notably for his railletes comtoises", explains Romain Meder.

Pissadalière from Boulangerie Veziano, Antibes

For this address, Romain Meder takes us to the South of France, to Antibes. "I know Jean-Paul Veziano well, and beyond being a real character, he makes the best pissaladière in France, in my opinion," admits the chef from Domaine de Primard. "His store must be 10m2, it's in a very small street, but his Provençal breads, like the fougasse, are really very good. Infact, he baked the bread for the Prince of Monaco's wedding," says Romain Meder.

Bread from La Ferme d'Orvilliers, Broue

Based in the Eure-et-Loire region of France, the owners of La Ferme d'Orvilliers are both farmers and bakers. "They make their own flour with which they bake bread, Viennese pastries, pasta... It's their bread that I offer at Domaine de Primard," says Romain Meder. "They also have a store where they sell their products as well as those of other local producers. You'll find meat, cheese, vegetables and more. Everything is top quality! "

Vegetables from Ferme du Recoin, Bourdonné

Ferme du Recoin is run by Nina Pancaldi and Mehdi Redjil. "Mehdi Redjilwas formerly head gardener at the Jardin de la Reine in Versailles. He has now set up his own market gardening business and is starting to sell to the general public. I work with him because he has a truly responsible approach, a true culture of living soil.He's going to expand his range over the years," says Romain Meder. It's also possible to order fruit and vegetables directly from the farm's website, before picking them up on Wednesdays, Fridays or Saturdays.
