Hélène Darroze's good addresses

Hélène Darroze, head of several restaurants in France and England, reveals her five favorite places to buy fish, goat's cheese and asparagus.

Hélène Darroze has a strong attachment to her producers. Whether at her Parisian restaurants Marsan and Jòia, or in London at The Connaught, the chef is careful to select her suppliers one by one, to offer the best possible produce to her customers. Her restaurant at Villa La Coste in Provence is no exception, and it's around this establishment that Hélène Darroze has unearthed for us five addresses of artisans and producers she particularly likes. Here they are.

Lou Miss goat's cheese, Meyreuil

Laurence Chaullier breeds a herd of a hundred goats in Meyreuil, less than 30 minutes from Villa La Coste. "She produces fresh and dry goat's cheese, as well as brousse du Rove," explains Hélène Darroze, who likes to serve these cheeses in her restaurant. "We work it in different ways. We can grate the dry cheese on lamb or use the brousse in other dishes."

Didier Ferreint's asparagus

"Didier is our green asparagus supplier," enthuses Hélène Darroze, who loves working with this product in spring. These asparagus from Mallemort are grown in the traditional way, respecting the environment. The chef adds that the farm also produces fresh and dried chickpeas, which she particularly enjoys serving at La Villa La Coste.

Ceramics by Sylvie Gélis, Aix-en-Provence

For the tableware at La Villa La Coste, Hélène Darroze has placed her trust in Sylvie Gélis, a ceramist based in Aix-en-Provence. "She makes everything to order for us! Plates, cups and displays", explains the chef, who has total confidence in the artist. While Sylvie Gélis doesn't have a boutique, it's possible to go and admire her work on Instagram and, why not, place an order with her.

Fish from Côté Fish, Le Grau-du-Roi

Mathieu Chapel is one of Southeast France's favorite fishermen. Based in Le Grau-du-Roi with his company Côté Fish, he supplies La Villa La Coste with pollock, bass, red mullet, sea bream, etc. "We have a great relationship! We always have a fish of the day on the menu, and we follow his advice", explains Hélène Darroze.

Wines from Château La Coste, Le Puy-Sainte-Réparade

Hélène Darroze couldn't conclude this selection without mentioning the wines of Château La Coste, which of course feature on the restaurant's à la carte menu. The estate produces two different white, two rosé and three red wines, as well as a "La Bulle de La Coste" vat, to be discovered at Hélène Darroze's restaurant, but also directly on the estate, or to buy online.
