Ten years shaping a sincere and committed cuisine in the heart of Avignon, a career forged in high standards and sharing. Today, Florent Pietravalle turns a page and announces that he will be leaving La Mirande on January 1, 2026, ready to write the next chapter in his culinary history.

A career born in the South, a rich itinerary

Born in Montpellier, France, Florent Pietravalle turned to cooking at an early age. Before joining La Mirande, he worked with chefs such as Yves Thuriès, then trained with Roland Reichrath, Jean-Luc Rabanel, Joël Robuchon and Pierre Gagnaire, all mentors who nurtured him both technically and humanely.

In 2016, he took charge of the kitchens at La Mirande, in this private mansion opposite the Palais des Papes in Avignon. Since then, he has put all his energy and convictions into nurturing a culinary offering that reflects his personality.

Over the past decade, Florent Pietravalle has left his mark on La Mirande: a cuisine attentive to the product, aromatic herbs, fermentations and sustainable approaches. He is known for his commitment to reducing waste, favoring local producers and working with raw materials with care. His dishes often strike a balance between audacity and simplicity: taste takes precedence, and technique is at the service of flavor, without ostentation.

Departure and its uncertainties

Florent Pietravalle has confirmed that he will officially leave La Mirande on January 1, 2026. He has announced that he intends to embark on a personal project, which he describes as important, but about which he is giving no details at present. To be continued!
