Gault&Millau's review 2026

There aren't that many chefs who can be recognized almost at first bite. Florent Pietravalle is undoubtedly one of them, having spent time with Jean-Luc Rabanel and Pierre Gagnaire, from whom he learned the rigor and knowledge necessary to forge his own world. In this former private mansion, practically nestled against the Palais des Papes, his cuisine stands in stark contrast to the magnificent 18th-century decor, perfectly recreating the ambiance of the Age of Enlightenment. Whether on the delightful terrace overlooking the Palais des Papes (when it's not too hot) or under the double coffered ceiling of the Salle Cardinalice, the dishes of our former Grand de Demain immediately strike the eye with their extreme elegance and their different levels of interpretation, at once gourmet, complex (without excess), fragrant and sometimes destabilizing, all the while remaining accessible provided you're not a lay customer. The poached langoustine then rolled in pig fat and passed through a capucin (to add a delicious smoky touch) is a great dish with its smoked moray broth and the small stew of veal tripe with peas, the marriage of pig, the combination of pig, asparagus and squid with a devil's sauce and ancient vinegar is a real eye-opener, before a refreshment in the style of a trou normand (a pear maceration of great finesse) allows you to regain your composure. The desserts, by Cristhian Ohnet, are just as successful, including a classic strawberry and elderberry combination with subtle notes, divine crème fraîche and elderflowers picked from the Mirande gardens. The service is impeccable, respecting the codes of elegance inherent to such a place, but never grandiloquent, and the cellar is serious and accessible enough, if not adventurous. At the time of writing, we have learned of the departure of Florent Pietravalle and Cristhian Ohnet, confirming a new direction for the restaurant.
