Prestige Restaurant The supreme sense of simplicity usually only comes to chefs who have been whitewashed. Florent Pietravalle seems to have reached this Grail, which is often only reached in the second half of the course, on a few occasions. A shrimp from Grau-du-Roi, barely worked, with a slice of vinegar-coated fig, the spider crab beef marrow with a light, sharp chili oil, shows, from the most recent of our 4 toques, that a successful plate doesn't have to splash guests with saucier talent. With humility and exacting standards, he learns and progresses every day, more than ever committed to the search for local ingredients. Alongside a vegetal menu, his "animal" formula offers unexpected and daring pairings: smoked moray eel with crunchy beans and cream of bottarga, with snacked sweetbreads (only slightly cooked, all the same), or creamed lamb's brains with roasted hake confit, herbs and coconuts. When it's time for Sarrians pigeon, the ceremonial is simple and precise: the fillet is almost blue, the leg roasted, chanterelles in a Camargue rice alcohol sauce and an apple duchesse. Pastry chef Christian Honet follows up with desserts with a singular theme (Damask rose, corn), varying textures and temperatures with pertinence on the basis of skilful fermentations. Prestigious cellar, stocked with large, fine labels from the major regions, and very extensive in Châteauneuf, more reassuring than surprising, even in the rather modest prices, but led by a good sommelier who's a bit more playful when it comes to pairing suggestions.
