Pistachio, coconut and chocolate flans: the weekend craze in Paris
For the duration of a weekend, the Épicerie des Ateliers du Bristol will be hosting a brand-new collection of flans designed by Maxence Barbot. These creations will only be available on June 6 and 7, 2026.
In the hushed setting of one of Paris's most emblematic establishments of luxury gastronomy, a sweet proposal is attracting all the attention: a series of flans revisited by pastry chef Maxence Barbot, offered only for a weekend at the Épicerie des Ateliers du Bristol, inside the Bristol Paris. The event transforms the venue into a veritable showcase for gourmet delights, for a brief but unexpected interlude.
A classic reinvented as a collection
A rising star in contemporary pastry-making, Maxence Barbot has already made his mark with a highly personal interpretation of the flan, notably his vanilla-pecan version, made with a goldencan, featuring a crisp, golden pastry, vanilla cream and pecan praline. For this short-lived edition, the chef takes his work one step further, with several new recipes.
The pistachio version goes for depth, with notes of Sicilian pistachios combined with caramelized praline and roasted chips. The coconut flan features coconut milk cream infused with fresh pulp, enhanced by a crunchy coconut base. Two flaky versions complete the collection, with a caramel flan featuring a melting cream balanced by a hint of salt and vanilla, while the chocolate version features Madagascar cocoa selected by Nicolas Berger.
Available only on June 6 and 7, 2026, this capsule collection will be available at the Épicerie des Ateliers du Bristol. Each piece, priced at 22 euros, will be on sale on-site or by click&collect.
