Émilie and Thomas Roussey launch Popote, a table inspired by broths
Following the opening of their Emilie et Thomas restaurant at Moulin Cambelong (2 toques) in 2023, the chef-couple have signed up for a new Aveyron address, due to open this spring just a stone's throw from their former restaurant.
After working in Rodez from 2015 to 2023, Émilie and Thomas Roussey have decided to move their gourmet restaurant Émilie et Thomas to Conques. The restaurant is now located in the heart of the Aveyron countryside, in the historic Moulin de Cambelong.
Symbolizing their union in life and in the kitchen, this house embodies a sincere, personal, four-handed approach to cooking. In direct contact with the surrounding countryside, the duo's gastronomic cuisine is guided by an eco-responsible approach and deeply rooted in the land. Respect for seasonality, local produce and an ever-changing menu: here, nothing is set in stone.
Technical expertise in the service of simplicity
Originally from Aveyron, Émilie trained at the Souillac hotel school in the Lot region, then in Nice, before joining the kitchens of various palaces. Thomas, whose roots lie in the Haute-Savoie region of France, honed his skills with a number of chefs. Sharing his seasons between Sébastien Bras, at Le Suquet in Laguiole, and Pierre Gagnaire, at Les Airelles in Courchevel. From these paths of excellence, the couple have developed a demanding technique, which they now put to good use in a cuisine that is deliberately refined, clear and sincere.
Popote, a friendly, everyday table
This spring, Émilie and Thomas Roussey will extend their culinary adventure with the opening of Popote in Saint-Cyprien-sur-Dourdou. Located just five kilometers from their Moulin de Cambelong gourmet restaurant, this new address will be inspired by the spirit of the French bouillon.
A project inspired by a desire to be different, marked by conviviality and accessibility. Popote 's cuisine will give pride of place to simple recipes, tinged with generosity, capable of bringing together all generations. A new address, in which the two chefs will offer everyday French cuisine that's familiar and easy to understand, as well as a menu that's always faithful to the seasons and local producers.
