Jérôme Nutile, the most enthusiastic
The old Mas de Boudan has re-established itself as one of Nîmes' landmarks. There's nothing Roman about it, even if this gastronomic arena has become Jérôme Nutile's stronghold. His cuisine is enthusiastic, gourmet and authentic. A fine example is the XXL langoustine in a head broth with green curry, accompanied by smoked cauliflower roasted in several textures, espuma of Cévennes sweet onion with peasant bacon. A very fine cellar, particularly sharp in the Languedoc region.

Red - Margaret Hôtel Chouleur, la Grande de Demain
One of the six Grandes de Demain 2022, Georgiana Viou has no intention of stopping there. With Suzanne Cochran, sommelier emeritus who knows the Languedoc terroir, and François Josse, French dessert champion, it's clear that her ambitions are now "no limit". There's no extravagance in this 8-course menu, only talent: the cauliflower advieh soft-boiled egg, the fresh calamari, direct from Le Grau-du-Roi, rocket and hazelnut, the monkfish tail cocotte and curry, the échine de porc noir de Bigorre condiment anchois... A place that remains a true restaurant, where you don't get a kick in the pants, just a whiff of happiness.

Opened last year, on the corner of rue de Bernis. A choice location for Clémence and Jonathan, who have beautifully decorated the dining room and terrace. Pascal, Clémence's father, is in charge of the kitchen, offering fresh cuisine inspired by the region and the Mediterranean. Great ideas, such as rabbit à la royale, à la Carême with a full-bodied truffled jus. A regional wine cellar that aims well at low prices. As a bonus, Jonathan's impeccable welcome is always in the right tone at every table.
