What's the specialty of this Bordeaux boutique?
Eric Pommereaud, a former French-Malagasy chef, has set himself the challenge of using vanilla to delight the taste buds of the Bordelais. After setting up his own business selling Madagascar vanilla to Bordeaux's top restaurants, he decided to move up a gear and create his own boutique based around this flagship spice.

Traditional vanilla pastries
The store sells vanilla beans in the grocery section, as well as a multitude of vanilla-based products that he designs himself: tea, honey, fleur de sel, foie-gras...
The chef has also created a take-away concept for his popular pastries. He offers all the traditional pastry specialties, made with fresh bourbon vanilla beans. These include the famous Bordeaux canelés, but also vanilla choux, flans, vanilla and fruit tarts, macaroons and cheesecakes.
Some recipes are created with a twist that echoes her origins: "For example, we use fruits such as mango, lychee and pink berries, which are very popular in Madagascar".
They are made every morning by an on-site pastry chef, leaving the founder time to continue his vanilla deliveries to Bordeaux restaurants, which are close to his heart.
