The most toasted: Flaveur
The Tourteaux brothers are unstoppable! It's rare to find a fraternal duo so complementary: one born in Guadeloupe, the other in Champagne, the influences of the islands and a perfect knowledge of the terroirs of mainland France give this brilliant amalgam reinforced by the Mediterranean essence present in every plate. The very seductive appetizers from the Maralpin region (Cians trout, gomasio-style bonito, excellent combava black pudding...) are a prelude to this memorable séquence, where the double service of cuttlefish and calamari on one side, and saffron bisque risotto on the other, delivers finesse and power in equal measure.perfectly cooked in its loumi broth, capon rouget pistes, remarkable with its lovage olive oil (another great house idea); the splendid Mediterranean lobstere gingembre christophine or the veal curry vert accompanied by a very gourmet sweetbread emulsion blanquette raviole trouchia, which once again takes us back to Nice and its traditions. Very fine cellar, in the modernity of today's winemakers and very good regional choices (Clos de l'Ours, Saint-Albert...), even if the coefficients are up to the new status of this table which continues to climb.

Jan-Hendrik van der Westhuizen's third toque at Gault&Millau is anything but a surprise. In this chic place near the port, he takes you back to his native South Africa with its customs and cuisine, between the Côte d'Azur and Middleburg. If the titles of the dishes are a little spartan, to the point of being a succession of ingredients, everything is delectable and tasty.tasty, from smoked salmon wrapped in thin slices of cucumber flavored with lightly mentholated buhu, to the "œillet", a sweet, hot-colda sweet and savory hot and cold dish in honor of his grandmother Maria, apples arranged in a cone on which to place a rosette of Tête de Moine cheese, accompanied by a velouté of haddock, gamberoni and chorizo, symbolic of the "competition dish" style that is once again in vogue. Keisuke Matsushima's table has been a haven of good taste for twenty years. Whatever the decade or season, his cuisine is always fair and inventive. It is the link between two sunny cultures, Japan and the Mediterranean. A simple sea urchin brouillade with nori and wasabi seaweed jam, featured on the €35 lunch menu, is just as convincing an example of this as is the lovely bridge to grand bourgeois cuisine, the lièvre en tourte et sa sauce royale avec une délicate mousseline de céleri-rave, as well as the subtle cooking of a grade 5 Kagoshima wagyu beef ribeye. The desserts are in the same spirit of unity, with Saint-Jeannet yuzu in tiramisu or pumpkin in a runny cookie with coffee ice cream. The cellar is unsuspected and overflowing with wonders for every taste and every budget. Cordial yet discreet service.

Over the past two years, the young team at Les Agitateurs, led by Juliette and Samuel, has taken on a new dimension that has not escaped anyone's notice. By emphasizing the importance of carefully sourced produce and, above all, respect for the producer, they are revitalizing an offer that is too easily touristized. The proof is in the pantry just a few meters away, a delicatessen and above all a delicatessen, which has worked so well since it opened with the confinement. At the restaurant, all is well, the reservation book is filling up all by itself and diners are delighted. The evening menus have grown in stature spectacularly (€59, €89 and €119), with the plate now well up to the level of the 2 toques: the declination on tomato as a starter, tapioca fish with onion juice and tonka bean voile de Colonnata, barbecued rack of lamb, watermelon and coriander ice cream dessert in the first five-course formula. The cellar follows the same search for precision in a naturally restless atmosphere. The best deal is lunch at €39 and four courses, with the same dishes as in the evening.

The legendary "Bar de la Dégust" is reborn under the auspices of bistrologist Armand Crespo (Bar des Oiseaux, Bistrot d'Antoine...) and chef Carlos Gomez (Peixes). Drawing on his Colombian roots, Gomez offers market cuisine with a twist. In the form of dishes to share, a beet tataki with red pepper, artichoke and peanuts, a subtle scallop tartare with vanilla mayonnaise, thebeef tiradito with nori seaweed, feta and shallot purée, or the simplest cauliflower tabbouleh with pine nuts and currants.
