Entremets Meringue d'amour from the Ritz Paris

François Perret embarks you on a gourmet idyll, light, melting and crisp. The Entremets Meringue d'amour features a meringue shell and a heart of whipped cream and pink praline caramel.

Philippe Conticini's Valentine's Heart

For Valentine's Day, the pastry chef has opted for chocolate and hazelnuts. On the menu: a dark chocolate pâte sucrée, a dark chocolate, almond and feuillantine crunch, a dark and milk chocolate ganache, a 69% almond and hazelnut praline, a hazelnut ganache montée and a 66% dark chocolate disk in a red velvety version for the occasion.

Pierre Hermé's Éclosion collection

Pierre Hermé continues its collaboration with painter Yukiko Noritake for Valentine's Day, illustrating boxes of macaroons and chocolate bonbons. At the same time, you can share his delicious Cœurs Mêlés, including the Ultime flavor"A tempo in three beats where Pure Origin Belize, Cayo District, Plantation Xibun chocolate sets the tone, followed by the intense, woody notes of Madagascar vanilla to end on the taste of chocolate punctuated with fleur de sel."

"In a very limited edition, I imagined this signature creation as an elegant, playful and gourmet gift to be shared anywhere and at any time!" explains the pastry chef. The entremets feature a pecan crunch, grapefruit zest-infused mousse, vanilla cream, grapefruit compote and 100% homemade pecan praline. Don't miss the decor: cigarette tile flowers and small marzipan flowers.

Love is sweet. At least, that's what pastry chef Sébastien Gaudard suggests with his airy choux pastry filled with smooth Madagascar vanilla cream and topped with crunchy caramel.

L'Ourson by Maison Sève

This Valentine's Day, master pastry chef and chocolatier Richard Sève has come up with "Les Oursons in Love", a chocolate and raspberry experience to suit every taste. The chocolate is made with 100% fair-trade, sustainable Nicaraguan cocoa from the Rio San Juan - El Castillero Plantation, and is combined with a soft chocolate cookie, a smooth cream and light dark chocolate mousse, and a cocoa nib praline crunch. With raspberry, it dons a red coat, concealing a raspberry mousse, while a vanilla namelaka cream caresses the taste buds. The pain de gêne cookie is generously topped with raspberries. The whole is finished with a fine layer of raspberry praline crunch.

Bouchée cœur bouquet from La Maison du Chocolat
