Exceptional Hotel After making culinary history in Annecy with his Clos des Sens, chef Laurent Petit returns to his native Langres to write a new chapter. With his wife Martine, he opened Le Clos Vauban, the first Relais & Châteaux in the Haute-Marne region, in an 1866 mansion built on the ramparts of the fortified town. Two restaurants reflect this ambition: Bulle d'Osier, a gourmet restaurant with poetic, garden and forest cuisine, and Mirabelle, more accessible but guided by the same exacting standards. At the helm, chef Valentin Loison and sommelier Anaïs Bercegeay create an experience rooted in the terroir, nourished by a 3,500 m² vegetable garden and a cutting-edge selection of wines from Champagne to Jura. Le Clos Vauban also offers the elegance of an intimate stay: eight Haussmann-style rooms and suites, furnished with antique pieces, bathed in generous light and open onto the valley. Under the Eiffel roof on the top floor, the experience takes on the air of a timeless retreat. Langres is once again one of the world's great destinations.
