Bakery Assuming a deliberately premium positioning, this neo-baker claims to want to "rediscover the essence of the trade and do it with a strong ethical commitment". In concrete terms, this translates into a boutique accessible to people with reduced mobility, offering a living space (in the spirit of a coffee shop) where you can take the time to relax, and an authentic decor -regular customers say they feel a positive energy- that reflects the philosophy of the artisan and his team, who are as passionate as he is. Together, they work hard to make food that's good for the palate, good for the health of all the customers they've won over over the years, and good for the planet. A fan of zero waste, waste sorting and short-distance sourcing, Nicolas Barret favors organic ingredients to make his sourdough breads, cookies, viennoiseries and pastries less sweet than elsewhere.
