Pastry At his eponymous establishment, Clément Fillet puts into practice all the techniques he's learned from his professional experience in stores, restaurants and catering. In his bakery-pastry shop, this fervent supporter of the region highlights local products and follows the seasons. For example, among his collection of natural sourdough breads, he offers a sweet butternut and roasted pumpkin seed variation in autumn. "It's perfect for soup," assures Clément, a gourmet at heart. In the patisserie, fruits, plants and flowers gathered during family outings are used to embellish creations that are as visually beautiful as they are subtly delicious. Tarragon awakens raspberries, rosemary sublimates apricots, thyme gives a refined pep to lemon... Even his chocolate éclairs are like no other. And because he loves his job so much, his creations are a joy to behold. A lover of nature, the store, housed in a lovely old building, is adorned with flowers and plants.
