Bakery Everything is done the old-fashioned way: breads and brioches are baked exclusively over a wood fire, and the dough is weighed and shaped by hand. It takes passion... and Michel and Catherine Cousin have it, along with Claude, their long-time right-hand man. Customers are like friends, and the organic farmhouse bread is highly prized. Specialties include tomato bread (pulped or dried), fig and hazelnut bread or chestnut bread, depending on the season. The son will take over the business in 2007, and we wish him every success.
