Pastry Cyril Lignac dreamed of it. Benoit Couvrand did it. With a certain success, there's little sugar in the black forest, the Caraïbe or the chocolate éclair. The creamy éclair au caramel au beurre salé and the baba au rhum, with their dense pastry soaked in a highly aromatic exotic syrup, both deserve special mention.
