Producer After having explored the seabed in the four corners of the globe, François-Éric Vauchez - an aquaculture engineer - has chosen to return to his homeland: the Ile de Ré, and more specifically the marshes of Ars-en-Ré. It's here that this artisan-producer has set himself a major challenge: to produce exceptional oysters, true "rare pearls" that he likes to show off - to amateurs and connoisseurs alike - in his treasure-island-style hut. His innovations include a unique breeding and maturing process: the Roll'Oyster, which simulates the natural effects of the tides to improve the quality of the oysters. Three varieties are offered at La Dégust': La Pleine Mêr, La Plate and La Sélection. The latter is a veritable ode to the sea, distinguished by its exceptional gustatory qualities: a fleshy, crunchy oyster with a delicate, slightly sweet hazelnut taste, sublimated by a subtle iodine flavor and a perfect salt balance. In his La Dégust' hut, François-Éric offers a number of formulas, including an exploration plate, as well as imperial shrimp prepared a la plancha. Simply good.
