Bakery The new baker in the Bizipoz building has quickly made a name for himself, and is already appearing on restaurant tables. With his breads made from ancient flours, long fermentation times, stone-baked perfection and excellent crumb quality, he has quickly found a following. Our favorites are khorasan and petit épeautre graine, the "bread of friends". A sustainable approach (no nitrite salts in the cold meats for sandwiches, no GMOs, organic sugar, PDO butter, unsold products donated to the Red Cross, etc.) and a good viennoiserie (huge rolls, to share unless you're really hungry).
