Refiner With its impressive marble counter and tall, backlit shelves, the Deux Chavanne lodge in the Victor-Hugo market is more reminiscent of an Apple Store than a cheese shop. That's because the founders are keen to showcase their creations, which are as much craftsmanship as they are art, and which complement the fine selections: truffle mousse de brie and truffle heart, or old gouda nougat.
