Chocolate factory Vincent Dallet is well known to Reims gourmets. This character, with a hairline somewhere between Dali and José Bauvet, is no stranger to recipes. Trained by some of the greats in the restaurant business, it's now with his son Maxime that he puts together his gourmet collection. Tuiles cacao, or in tribute to local specialties: Clairefontaine and parfait champagne rosé, red fruit and pistachio cookie, or lbaba à la fine de Marne... mille-feuilles and chocolates that are highly successful and subtle.
