The balance between untreated, additive-free stone-ground organic flours, natural leavening, technical gestures and, of course, respect for time, is perfect! Romain Fourcy has chosen this profession to give meaning to his life: to nourish and please with good, healthy products. Romain and his team use flours that retain the whole wheat kernel, so you can benefit from its richness in fiber, nutrients, vitamins, trace elements and proteins. The long fermentation process enhances the aromas while making the bread easy to digest. At the heart of the delights, their rye sourdough bread, available in a range of flavors including seeds, and the incredible soft and flavorful Hokkaido sandwich bread, the result of a unique process using Italian panettone sourdough. We also recommend the panettone range, one of the house specialties, or the tasty Fantine, which honors the oil pump of our ancestors. L'Équilibriste is quite simply a remarkable address!
