Bakery At Baking Mama, in Lille, or at La Fabrique, in Ronchin, Margaux Carré, Master Pâtissière and chocolatière, orchestrates the production -100% in-house and according to the rules of craftsmanship- of her very fine proposals, including viennoiserie. The flours are certified, the butter is PDO, the fruit is fresh... And the majority of products are made with homemade sourdough. If the special breads are distinguished, it's in patisserie that Margaux expresses her distinctive savoir-faire. Like everyone else, we salute her gourmet and refined sugar-free chocolate and red fruit cake, named Petit François in homage to her diabetic grandfather. In spite of his young age, he has won numerous awards, such as the 101 Femmes de Matignon in 2024. "I'm going to enter my traditional galette and baguette in various competitions," adds Margaux. It's a pleasure to savor her wonders in the Baking Mama coworking space, which also offers seasonal salads, soups, sandwiches and quiches, all made to her signature exacting standards.
