Winery presentation by Gault&Millau
Stéphane Vignon considers himself a craftsman of the terroir and is convinced that, in the future, Champagnes will be single-vineyard and single-cru. He owns dozens of plots in the Grand Cru villages of Verzenay and Verzy, totaling 7 hectares dominated by Pinot Noir. A proponent of sustainable viticulture without seeking certifications, Stéphane partially works the soil using horses. In the cellar, he takes a hands-off approach: no fining, no filtration, natural yeasts, and aging partly in barrels made from wood sourced from the family’s forests. His champagnes, which have won numerous awards in international competitions, are divided into three lines: “Les Marquises,” “Les Parcellaires,” and “Terroir.”
