Chanoine Frères is the second oldest champagne house, and the family is one of the oldest in Épernay. Paradoxically, Philippe Baijot has set up an ultra-modern production facility in Reims, enabling him to handle temperature- and hygrometry-controlled storage, automatic riddling, disgorging and packaging. In addition to the classic range, the "Tsarine" cuvée was created as a tribute to Russia, champagne's main foreign market in the 19th century. Franck Coste was appointed president and CEO of Chanoine Frères in 2018, and Isabelle Tellier presides over the wines in her role as cellar master. The "Tsarine" cuvée tops the range.
