Chanoine Frères is the second oldest house in Champagne, issued from one of the oldest families in Epernay. Paradoxically, Philippe Baijot has installed a state-of-the-art modern production facility in Reims to process winemaking with controlled temperature and humidity control, automatic riddling, disgorging and labelling. In addition to the classic range, the cuvée Tsarine cuvée was created as a tribute to Russia, the principal foreign champagne market in the 19th century.
