In the 1970s, it was still possible to set up a winery in Champagne, as Alain Soutiran, a member of the cooperative until 1986, did. Since then, the third generation has arrived, represented by Valérie, who runs the business with her husband, Patrick Renaux. The couple work the family vineyards in Ambonnay, a village classified as a Grand Cru. Although Pinot Noir predominates, they use Chardonnay in the majority of their cuvées. Vinification is mainly carried out in stainless steel vats, but barrels are used for certain fermentations of the best pinot noirs. The spirit of their champagnes is to sublimate the Ambonnay terroir and highlight its original character. The wines in the range are highly expressive, but the guiding principle remains freshness.
