Released at the end of 2021, this 2012 edition has spent almost 10 years on its lees. Served chilled and waited 20 minutes in the glass to rise to around 12-13°, this Mesnil shows itself to be royal. The string of bubbles is intact and the color a true invitation to pleasure. Although very young, this 2012 offers slightly exotic aromas on the nose, with the characteristic oceanic character. The overall impression is one of rare purity. On the palate, too, it's straightforward, pure and, above all, racy. A Salon of finesse and elegance.

Passion, madness, freedom: these may well have been the driving forces behind Eugène-Aimé Salon's creation of his blanc de blancs champagne. The house, founded in 1920, produces only exceptional years, and the image of Aimé Salon, a free and creative man, continues to guide it. Jardin Salon" covers 1 ha, the other 9 hectares being spread over 19 parcels in the Mesnil-sur-Oger vineyard alone. Single-varietal (Chardonnay), monocrus and monomillésimes, the wines are produced in limited quantities of around 20,000 bottles. Cellared for at least eight years, and sometimes much longer, these extraordinary champagnes acquire race and elegance. A unique champagne and a unique domaine.
