Salon
Passion, madness, freedom: these may well have been the driving forces behind Eugène-Aimé Salon's creation of his blanc de blancs champagne. The house, founded in 1920, produces only exceptional years, and the image of Aimé Salon, a free and creative man, continues to guide it. Jardin Salon" covers 1 ha, the other 9 hectares being spread over 19 parcels in the Mesnil-sur-Oger vineyard alone. Single-varietal (Chardonnay), monocrus and monomillésimes, the wines are produced in limited quantities of around 20,000 bottles. Cellared for at least eight years, and sometimes much longer, these extraordinary champagnes acquire race and elegance. A unique champagne and a unique domaine.
