Passion, extravagance and liberty are the key words that pushed Eugène-Aimé Salon to create His Blanc de Blancs. The image of Eugène-Aimé Salon, a creative and free-thinking man, continues to guide this house born in 1920 and only produces Champagnes on exceptional years. The Salon garden has a one-hectare superficy, leaving the 9 other hectares to be spread over 19 plots constituting the Salon vineyard at Mesnil-sur-Oger. Single grape (Chardonnay), single cru and single vintage, the production is limited to 20 000 bottles. In order to acquire sophistication and elegance, these extraordinary wines are kept at least 8 years and sometimes even more in the cellar.
